The Triple Threat

Last weekend we had our good friends/pizza groupies and daughter in town for Gasparilla. Friday night’s pizza line up included:

1.)  Gumbo Pizza with Shrimp and Andouille Sausage in a home-made roux and few red bell peppers thrown in for color, all topped with mixed cheeses!

2)  Sweet Potato and Pancetta with a touch of sauteed onions, with assorted cheeses,

3) “Italian-style” Chicken Sausage and Pepper, with Italian cheeses.

A full array of #FuegoBox hot sauces were ready and standing by to augment the heat wherever needed!

New Entry – Cuban Pizza (6/24/16)

Cuban PizzasWith a nod to Three Guys From Miami whose site helped us develop this idea (Gouda – nice!)

We were at a networking event discussing, what else, pizza and the idea of Hawaiian pizza (without pineapple) and Cuban pizza (without roasted pork) were kicked around.  After a little thought and pinch of Google, we came up with a two Cuban pizzas, one ‘white,’ one ‘traditional.’

White Cuban Pizza – Cilantro pesto base, sliced gouda cheese, sliced chorizo, Anaheim pepper slices, and sweet plantains and a touch of Italian cheeses (it’s Tampa Cuban, after all). “Bammed” with a bit of roasted garlic powder and ground cumin just out of the oven!

Traditional Cuban Pizza – Roasted tomato base, sliced gouda and chorizo, Anaheim pepper slices, sprinkle of Italian cheeses and sweet plantains.  A little oregano and cumin coming out of the oven.

Both were excellent, though the Cold Pizza Factor (CPF) on Saturday was a little low due the plantains (IMHO).  Both did re-heat very well stove top in a frying pan!

Sunday Dinner, June 6

Mussels and Sweet Potato Curry 01Mussels, how do I love thee?  Let us count the ways …

That could go on for a while, so let’s get to tonite’s preparation:  Sweet Potato Curry with Mussels!

A ‘Top Ten’ contender, for sure.  Substitute chicken broth for vegetable broth, and a splash of cream for yogurt, but still a healthful and tasty dish.  Maybe better suited for cooler temps, but not out of place in June.

Pair with salad, crusty bread and a light Riesling, or white wine of your choice – Enjoy!
